French Toast

This is always a good family breakfast on Sunday mornings.

INGREDIENTS:
4 eggs
2/3 cup milk
2 teaspoons of cinnamon
8 thick slices of 2-day-old bread, better if slightly stale
Butter
Maple syrup

Directions:
1 Beat eggs, milk, and cinnamon together. If using, add orange zest and/or Triple Sec. Whisk until well blended. Pour into a shallow bowl.
2 Dip each slice of bread into the egg mixture, allowing bread to soak up some of the mixture. Melt some butter (or use vegetable oil) over a large skillet on medium high heat. Add as many slices of bread onto the skillet as will fit at a time. Fry until brown on both sides, flipping the bread when necessary.
3 Serve hot with butter, maple syrup, and if available, fresh berries.

Easy Omelettes

This is just an easy quick way to do eggs. Its fun and tasty that I just...make.

Ingredients
- 4 Eggs
- 1/4 Bell Pepper
- Salt
- Pepper
-1tsp butter

Directions
-Heat a medium sauce pan on med heat
-Whisk eggs, salt and pepper together
-Finely dice bell pepper
-Melt butter, swirling around
-Add egg to pan
-As the eggs cook, frequently pull edges into the center....the key is to keep the egg moving.
-When the bottom is almost done but the top is still quite raw add the bell pepper
-Fold sides over and flip to cook top

This recipe worked well, much nicer in a large pan because you get a softer egg. The peppers should be sauteed first to remove some of the water. When they arnt then the egg gets lots of water afterwards.

Cinnamon Buns

I made the Cinnamon buns from scratch not using a bread maker and it was fun. The bread was very stiff and breaky  but it was nice and easy to roll out in the end. This is the recipe I followed Cinnamon Bun Recipe .

Crepes

I made this on Saturday morning for breakfast. It's a family recipe but since it takes a while to make, we rarely have it. I had to times everything by 4 because it only made 4 servings and I have a big family. My full family liked it, although they all took different toppings. My favourite toppings are strawberries and icing sugar, with a bit of whipping cream on top.

Ingredients:
-1 cup of flour
-2 eggs
-½ cup of milk
-½ cup of water
-¼ teaspoon of salt
-2 tablespoons of butter (melted)
-any toppings desired (optional)

Directions:
In large mixing bowl, whisk together flour and eggs. Add milk and water and stir. Beat in salt and butter until smooth. Heat oiled griddle or frying pan over medium-high heat. Pour batter onto the griddle (only about ¼ cup for each crepe). Tilt pan if necessary so batter is spread evenly. Cook the crepe for about 2 minutes or until the bottom is lightly browned. Flip crepe and cook the other side until slightly browned. Serve with toppings such as fruit, whipping cream, and syrup.

Spinach Quiche

I love spinach and bacon so a spinach quiche seemed ideal for the breakfast category. I didn't use a recipe, just kind of made it up as I went so the measurements are approximate for the ingredients.

Ingredients
7 eggs
150g frozen spinach
1/2 cup bacon bits
1/2 cup feta cheese
1 green onion
salt to taste
1 pie crust

Directions
1.Preheat over to 425C
2. Wisk together ingredients
3. Pour mixture into pie crust
4. Cover with tin foil
5. Bake for 45-60 minutes

I love this. there are so many easy variations on quiche. I also made one with
red pepper, red onion, cheddar cheese and ham.
