For my baking assignment, I decided to make gluten free banana muffins, since both my father and sister cannot have any gluten. These are super healthy, but you wouldn't even know it since they're delicious! I got the recipe from my mother's "recipe box" in the kitchen, so I have absolutely no idea where it came from.


Gluten Free Banana Muffins

Ingredients:

  •  3 large bananas
  • 3/4 cup white sugar
  • 1 egg
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 1/2 cups gluten free flour mix
  • 1/3 cup unsweetened apple sauce
Directions:

1. In a large bowl, mash the bananas until mostly smooth. Beat in the sugar and the egg. Add the apple sauce.
2. Add the baking soda, baking powder, salt and flour to the banana mixture. 
3. Bake in a slightly greased muffin pan for 18-20 minutes at 355 degrees.

Yield: 18 muffins.
